Baked Apples

Ingredients

  • 6 medium (5-6 ounces each) baking apples
  • ¼ cup packed light brown sugar
  • ¼ cup golden raisins
  • ¼ cup finely chopped pecans
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon unsalted butter

Method

Water or apple juice Preheat oven to 350 degrees. Using a corer-peeler, cut out the core from top of the apple, leaving a well. Do not cut all the way through. Remove a 1-inch strip of peel around the middle of each apple. Place in a 2-quart shallow baking dish. In a bowl, stir together brown sugar, raisins, pecans, cinnamon and nutmeg. Spoon two heaping teaspoons filling into core and dot with 1/2 teaspoon of butter. Add just enough water or apple juice to bottom of baking dish to cover bottom of dish. Cover lightly with foil and bake about 30 minutes or until apples are tender.
