Simple Chicken Pot Pie

Ingredients

  • 1 lb. boneless chicken breasts
  • 2 tablespoons butter ( I use Pam instead)
  • ½ teaspoon salt
  • ½ teaspoon dried thyme leaves
  • 1 (16 oz) package frozen vegetables
  • 1 can cream of chicken soup
  • cup chicken broth
  • 1 refrigerated pie crust at room temperature
  • 1 tablespoon butter

Method

Cut Chicken into bite size pieces, sprinkle with salt and thyme place in Dutch Oven and cook. Add vegetables, soup and chicken broth and let simmer for about 5 minutes. While that is simmering unwrap pie crust and make some decorative cut outs. Place chicken in pie tin and cover with pie crust. Arrange cutouts on top of crust, but don't cover the holes you cut out, and brush all of it with melted butter. Place in Dutch Oven and bake for 15 minutes. 10 coals on bottom 15 on top (350 degrees).
