Since I will be working on St. Patrick's Day, I made my traditional meal yesterday. Boy was it good! Here is my recipe. Enjoy! Brenda So Cal Dutch Oven Gals Corned Beef In a 12 inch deep I added. 4 pound Corned Beef covered with water 3 minced garlic cloves 1 tsp. whole cloves 1/2 tsp. black pepper corns 2 T fresh thyme 1/2 bunch fresh parsley (chopped) 3 bay leaves Cook for about 2 1/2 hours at 350 degrees. 17 top / 8 bottom Then add the following vegetables and cook until tender. Serve up in the pot or on the lid. Serve with Whipped Horseradish. 2 large onions 1 bag baby carrots 1 head of cabbage cut up 20 new potatoes (small) 1 stalk of celery cut up in chunks Whipped Horseradish 1/2 cup heavy whipping cream 2 T horseradish 1 T Grey Poupon mustard Hand whip heavy cream until it becomes stiff. Fold in the horseradish and Grey Poupon. Serve with Corned Beef. |
