Old Jack’s Southern Pecan Pie

Ingredients

  • Filling
  • 4 eggs, beaten
  • 2 tablespoons heavy cream
  • 1 cup light brown sugar, packed
  • 4 teaspoons all-purpose flour
  • 1-⅓ cup light corn syrup
  • cup butter, melted
  • 1-½ teaspoons pure vanilla
  • 1 tablespoon Jack Daniel’s Tennessee Bourbon Whiskey
  • 2 cups chopped pecans
  • Pie Crust
  • 3 cups flour
  • 1-½ teaspoons salt
  • 3 teaspoons sugar
  • 1 cup Butter-Flavor Crisco shortening
  • ¾ cup cold water
  • Parchment paper for lining DO

Method

1. For the filling, sift the sugar and flour together and add the syrup and melted butter.
2. Slightly beat the eggs and cream together.
3. Stir in the vanilla and the bourbon and add to the sugar mixture.
4. Fold in the chopped pecans.
5. For the pasty, blend the flour, shortening, sugar and salt together in a bowl until it resembles crumbs.
6. Add cold water and stir until the dough forms a ball.
7. Place parchment paper strips in the bottom of the DO and then place a circle of parchment paper covering the strips on the bottom.
8. On a flour board, roll the dough big enough to fit 12” DO.
9. Place the dough in the DO and pour the filling in to the uncooked crust.
10. Trim and pinch the edges.
11. Garnish the top as desired.
12. Bake at 325º (16 coals on top and 8 coals on the bottom) for approximately 1 to 1-1/2 hours or until done.
13. Chill before serving.
